I am always so tempted to skip breakfast, or just run out the door with a granola bar. There is a sassy chestnut waiting for me at the barn after all! Lately, though, I have been trying to get better about eating a good breakfast before my day begins; and on the days I do, I feel amazing. I am more energetic, and even tempered, which is great when dealing with horses. This is one of my favorite breakfasts. It takes about ten minutes, and is so filling without being too heavy!
Ingredients: Steel cut oats, cinnamon, pumpkin seeds, strawberries, grapes, peanut butter
Directions: Boil the oats and pumpkin seeds, with cinnamon (to taste), until the oats are soft. Mix in the fruit, and top with 1/2 teaspoon of peanut butter.
Very simple, and a little more exciting than plain oatmeal.
