Sweet potato hash!
This is a recipe from the Country Heat meal plan that I made my own (because it is impossible for me to follow a recipe). This dish is great for a breakfast side, or really for any time of the day! It is quick and easy to make!
Ingredients:
*Sweet potato, onion, kale, olive oil, garlic powder, rosemary.
Directions:
*Sauté cubed sweet potato and sliced onion in olive oil, stirring frequently, until onion turns translucent and sweet potato softens. Season with sea salt, garlic powder, and rosemary. Add kale, and cover until it wilts!
