This was a very easy fall dish I made yesterday while doing some meal prep for the week. Potatoes just make it feel like fall, even if Texas doesn’t!
*Ingredients*
Fingerling potatoes
Sea Salt
Olive Oil
Basil
Rosemary
Pre-heat the oven to 350. Rinse and scrub the potatoes, then place in baking dish. Drizzle olive oil over potatoes, to taste. Salt to taste. Add a pinch of dried basil. Sprinkle rosemary all over. Bake for about thirty minutes, or until soft.
I have never been one to meal prep, but it seems that I am unable to eat dinner until nine o’clock these days so I decided to give it a shot this week!
